Recently I decided to become gluten-free. Not to become part of a craze, or to feel so "Orange County." Not because I'm trying to loose weight, but because I have an inflammatory disease. Others I know suffering from various ailments, have cut gluten out of their diet, and have seen and experienced significant results. So last Sunday it was on. I survived a week and already feel less bloated, like my every morning ritual of yoga and pilates are actually showing. Let's see how the psoriasis does.
My typical menu during the week compared to my newer version:
Breakfast: Eggs with Ezekial bread or gluten free cereal, well I switched out the Ezekial bread with some gluten-free stuff from Trader Joes, it's wierd, need to be toasted with cream cheese. No good with peanut butter!
Snack: String cheese and fruit
Lunch: Plain greek yogurt with trail mix or a salad. Switched out the dressing for a gluten free one
Snack:Lara bar, but then I give in and have a bunch of the crackers my students eat...NO MORE CRACKERS!
Dinner: Usually some sort of rice with veggies and shrimp. Or some sort of fish with a sweet potato and roasted veggies. The tricky part here are the MARINADES and dressings....I'm on a mission to find the best Gluten-Free marinades and ways to make entrees flavorful.
Or, when the hubby isn't home, I make some sort of quinoa salad, here's a link to a good one I found on Pinterest!
